Spaghetti Squash Fritata
























One of my resolutions for 2011 is to eat vegetables and fruits I haven't tried yet. So far, I've had brussel sprouts, swiss chard, radish sprouts- vegetables you don't normally see in the Philippines. Now, I can add spaghetti squash to my list :)

To make spaghetti squash frittata, you'll need some:
spaghetti squash (bought this at SM Makati. It's from Dizon farms I believe)
eggs
olive oil
butter, melted
milk
salt and pepper
blue cheese 
chorizo (purchased at Brera on Yakal St. yummy and affordable at P100 per 100 grams)

To prepare the squash:
Cut the squash in half and clean the seeds and inner bits out. Drizzle it with olive oil, sprinkle with salt and pepper, and you can even pit globs of butter on top. Then bake the squash, fleshy side up, in a 250degree oven for about 40 minutes. Keep on checking it constantly and when you can pierce the meat with a fork, and it comes off from the side, then it's cooked! 

You'll find that the spaghetti strands are amazing. Hahaha! Nature at it's best. The Spaghetti Squash adds great texture to the frittata.

To prepare the fritata, crack some eggs into a bowl. Whisk it and add milk, melted butter, salt and pepper. Place some squash, chorizo and blue cheese in a baking dish. Add layers until you reach the top. Then pour in the egg mixture. Bake in the oven for about 10 minutes, until you see that the egg is cooked and that the cheese has melted on top.
