Healthy Brunch Bunch

Feeling a bit under the weather. Since the boyfriend is out working, I had to fend for my sick self. Forced my zombie ass to whip up a healthy meal. Squash soup. And asparagus-basil omelette with organic cherry tomatoes and micro arugula, packed with a hefty dose of antioxidants. I need all the nutrition I can get.

To make the soup, I boil the pumpkins in chicken stock until they're soft enough to be mashed with a fork. I add salt, pepper, and some nutmeg. (Longer post about squash soup here)


For the omelette, you'll need:
a couple of eggs
asparagus, cut into 1 inch pieces, blanched
salt and pepper
olive oil
basil, torn


Just fry everything together in a pan. Adjust seasonings to your liking. 

You can add more stuff like garlic, onions, and some cheese. I imagine feta or brie could make this dish even more special.

But for now, this would have to do. *sniff sniff*
