Baked Buffalo Chicken

I recently bought a huge chunk of blue cheese from Brera, this newly-opened deli on Yakal St. I didn't want it to go to waste so I thought what a better way to use it than enjoy it with buffalo chicken! After all, I have been craving for Bonchon Chicken for a few weeks! Hahaha The best part, this whole meal would cost less than a large box of soy-garlic wings. (Oh but I do love Bonchon, don't get me wrong!)

This recipe is a bit labor-intensive, but I enjoy that. I always go for "slow food", for dishes that I have to slave over and wash so many dishes after. I find that it makes the eating part all the more fun and satisfying!

To make these Buffalo Chicken yourself, you'll need some:
chicken, drumsticks or wings

For the marinade: 
soy sauce
ginger, cut into thin strips
brown sugar

For the glaze:
ketchup, a few spoonfuls
hot sauce
worcestershire sauce
butter, melted

For the dip:
blue cheese
sour cream
a squeeze of lemon
salt and pepper to taste

Clean the chicken and marinate it in a mixture of soy sauce, ginger, and sugar for a few hours.
Bake the chicken at 250degrees until crispy. Make sure to turn it every so often to prevent burning.

To make the dip, combine blue cheese and sour cream in a bowl. Add some vinegar, a squeeze of lemon, and salt and pepper to taste. Place in the refrigerator to chill.

To make the glaze, combine melted butter, soy sauce, ketchup, hot sauce, vinegar and worcestershire sauce in a large bowl. Adjust seasonings to your preference. Once chicken is cooked dunk them in the glaze to coat them evenly. Bake again for about 10 minutes.

Best served with sticks of carrot and celery, and potato baked wedges. You'll just need potatoes, cleaned and cut, salt and pepper and olive oil. Simply toss the potatoes and spices together, put in baking dish and bake until soft in the inside. About 20 minutes in a 200 degree oven.

Mmmmmmm. Gotta love Buffalo Chicken! My version is baked so it's more healthy :) Hahahahaha Absolutely messy to eat but oh so delicious!
