Squash soup

Squash soup is one of the easiest things to make. Just throw everything in a pot and you'll be ready to enjoy its hot goodness in a few minutes. I've only just liked squash soup for a few years. As a kid, I only knew squash as part of Pinakbet, an Ilocano vegetable dish which I never enjoyed.

I must thank my friend Sam, a staunch fan of squash soup, for introducing me to Cibo's version. It has been part of my list of favorite things since then. But I've learned to make my own version at home, too.

To make some yourself, you'll need:
squash, cut into small chunks
chicken stock
olive oil
garlic, minced
sour cream
salt and pepper to taste

Put some olive oil in a pot. Add the garlic and once brown, you can add the chunks of squash. Brown the sides then add chicken stock. Let it boil until you can mash the squash down with a fork (about 15 minutes). Turn off the heat then add nutmeg, salt and pepper, and a few tablespoons of sour cream, depending on your preference.

This can be served with chunks of bread and even with cheese sprinkled on top. Yum!
