Beef and Spinach Soup

Bought some organic spinach from the friendly fellow at the Ifugao booth at the Legaspi Market. I usually just buy black tomatoes from him (Will make a post on those juicy black tomatoes soon!) but last weekend, he suggested I get some spinach as well. My favorite thing about his produce? They come from Cosmic Farm. How cool-sounding is that?! Haha!

Since the weather in Manila is wet and dreary again (plus, someone sent major bad vibes my way via Twitter), I needed something to pick me up. This warm soup was the answer.

To make some yourself, you’ll need:
ground beef
peanut oil
garlic, smashed
onions, chopped
carrots, diced
spinach, cleaned and chopped
soy sauce
fish sauce
salt and pepper to taste

Saute the garlic and onion in peanut oil. Add the carrots, then add ground beef. Season with salt and pepper. Once the beef is cooked, pour water into the pot and let it simmer for a few minutes until the carrots are soft. Add the noodles and let it simmer again. Taste the soup to see if it fits your palate. At this point, I usually add soy sauce and fish sauce to try to balance out the flavors. About a minute before serving, add the chopped spinach then turn off the heat. And just like that, the soup is ready to serve.
