Scallops and Couscous







Bought some frozen scallops from my favorite seafood vendor at the Salcedo Market. I've never cooked scallops before, and since I've been feeling under the weather, I decided to just take it easy and do something quick and with little fuss.

To make some yourself, you'll need:
scallops
butter
white wine
garlic
lemons
parsley
couscous
water


Melt a bit of butter in a pot and add in the garlic. Once a bit brown, add the couscous, mix then add some water til just above the grains. Add the parsley, salt and pepper. Let boil then set aside. The couscous will puff out on its own after a few minutes. Just mix it up again once the water has been fully absorbed.


Then put a bit of butter into a pan, and add the scallops. Cook on each side til just about done. You wouldn't want rubbery pieces of flesh, would you? Sprinkle salt and pepper and add a bit of white wine to finish it off.


Place couscous on a plate and add the scallops and wine on top. Add a slice of lemon on the side so you can season the dish even more.
