Eggs Benedict

I love eggs ben! The first time I became truly in love with it was at Mandarin Hotel. My girlfriends and I were having a sleepover and we had a breakfast buffet at Tivoli. I think I ate about 4 that morning. They were small ones though (LOL! as if!).

After that, I've been ordering it up wherever I could get them- Coffee Bean and Tea Leaf, Bizu, Mr. Jones. This is the first time I tried to come up with it on my own.

You'll need:
ham- I used prosciutto
english muffin- I used herb foccacia 
salt and pepper

To make the hollandaise sauce, melt butter in a small sauce pan on top of another pot with hot water (improvised double broiler!) Then add the lemon, and cayenne pepper. Whisk eggs in another bowl. Add and into the butter and whisk until it doubles in volume. Whisk hard else you end up with scrambled eggs. Yes, this is a very hard procedure and you have to tweak the flavors until it tastes right to you.

Place bread on a plate and put the prosciutto on top. In another pot, poach some eggs (a skill I have yet to fully master!). Put vinegar in the water, swirl, then carefully add the eggs. The white should envelope the yolk if you did it right.

Place the poached eggs on top of the prosciutto then drizzle hollandaise sauce on top. Sprinkle some herbs and salt and pepper if you like.
