Beef Stew

 

I love beef and I love tomatoes, so it follows that I love beef stew. I never really have an exact recipe for it. I just throw everything into the pressure cooker and tweak the flavors as I go. End result should be a rich and hearty stew.
I used to watch Ina Garten a lot when I still lived in my mom's house. I loved the episode where she made beef bourguignon. My dish is the local, speed-cooked version! It can also serve as a basic dish that can made even more special by putting more ingredients like mushrooms, radish, olives and what not.

To make this, you'll need:
beef cubes
garlic
onions
celery
canned tomatoes
potatoes
carrots
rosemary
water
red wine
tomato paste
soy sauce
chilis
salt and pepper

Saute chopped onions and garlic in a bit of olive oil. Brown the beef on all sides. Pour water and red wine into the pressure cooker and let boil. Add the celery then close the lid and let it cook for 40-60 minutes.

Release the pressure and carefully open the lid. Remove the floating bits in the liquid and on the sides of the pot. Add more water if needed and pressure cook again if the beef isn't soft enough. Once done, add the potatoes and carrots and let cook for a few minutes. Add the canned tomato and adjust the seasonings to your liking. You can add salt and pepper, soy sauce, worcestershire sauce, hot sauce and the like. It all depends on the flavor you want to attain. I usually add tomato paste to make the sauce even richer, and add a bit of soy sauce to round off the flavor.
