Cream Dory with lemon, dill and capers









I'm very picky when it comes to fish. I can only eat the fried or ihaw fish our yaya makes. I don't like paksiw. Fish bones (tinik) and scales make me want to run away and puke. My mouth is very sensitive, so I can easily feel any microscopic tinik that might have escaped into my carefully picked fish meat.

Cream Dory is the only fish I can cook on my own. You can buy it in fillets, without the fishy smell and without scales! That's the most important part of all. Haha!

So whenever I feel that we've been eating too much meat, I make this so we can enjoy something healthy instead.

To make this yourself, you'll need:
cream dory fillets
butter
white wine
garlic
dill weed- I've bought dill at Landmark, Rustan's, Santis, Legaspi Market and Salcedo. About P50 a bunch. The weight of the bunch varies though.
capers
salt and pepper

Melt some butter in a pan. Add slices of garlic, then add the fish fillets. Add a splash of white wine and let reduce. Season with salt, pepper, and dill. Flip once the side has browned. Add a bit of lemon juice and taste the sauce if it is to your liking. Add rinsed capers (sometimes it's too salty, so you might want to rinse it out or just lessen the salt you put into the dish). Add more dill and pepper. Serve with lemon slices.


You don't want to overcook the fish, so you'll have to be fast at tweaking the flavors and adding ingredients. Add more butter if you're a butter fiend! Omit the white wine if you don't want the alcohol! Use calamansi instead of lemons if you want! You can easily substitute ingredients to make this dish your own.
