Herb Roasted Lemon Chicken

One of my favorite restaurants in Manila is Cibo and one of my fave dishes in Cibo is Pollo Arosto Limone.

When Mike bought  me a convection oven last Christmas, I knew that a roast chicken was in order. This is the first time I've ever cooked chicken whole! What a feat is was.

To make this yourself, you'll need:
chicken- I used free-range chicken by Bounty Fresh
olive oil
soy sauce
brussel sprouts

Squeeze lemon juice into a bowl. Add a bit of soy sauce, salt and pepper, and some crushed garlic cloves. Marinate the chicken overnight, turning it to make sure that all sides are well marinated.

Stuff the marinated chicken with a lemon poked with holes, garlic, onions, and herbs.  Place breast side down on a roasting pan. Place herbs and bacon on top. The bacon adds moisture and flavor to the chicken!


Roast in a pre-heated 200 degree oven for 30 minutes. Afterwards, turn the heat down and turn the chicken over. Place herbs and bacon on top as well. Cook for another 40-60 minutes until meat is cooked through and the skin is brown and crispy. About 30 minutes in, add the brussel sprouts and potatoes to roast with the chicken juices.


Carve the chicken and plate along with roasted potatoes and brussel sprouts. Drizzle with sauce.

We plated the chicken nicely but of course we ended up eating the drumsticks using our fingers. Good food should be enjoyed that way! It's basic, primal action that lets you enjoy food even more. Don't you agree?
