Ground beef with Veggies

I was craving for something I always used to eat at home. Weirdly enough, as I scoured the grocery aisles, I  found myself grabbing ingredients I could use to make a hybrid of two dishes that our yaya would always make- Ground beef with carrots and potatoes. And beef strips with corn and sugar snap peas.

I didn't want to use potatoes since it has become my default vegetable siding. Instead of snap peas, I got green beans instead.

This is what I came up with. I simply call it Ground Beef with Veggies.
Yeah, I should really put more effort in making names for these dishes. Haha! Maybe next time.

To make this yourself, you'll need:
ground beef
olive oil
garlic, chopped
onions, chopped
carrots, chopped
green beans, snapped into small pieces
corn
salt and pepper

Saute onions and garlic in a bit of olive oil. Add the ground beef and let brown. Add a splash of water, soy sauce, and the chopped carrots. Let simmer for a few minutes then add the corn and green beans. Add salt and pepper to taste.

To mix things up, you can use beef strips instead of ground. You can use fresh corn instead of the canned variety, or even the baby ones. Cut the carrots into strips and add red bell pepper for added crunch.
