Country Fried Chicken























Fried chicken is comfort food! Plain and simple.


Although I used to enjoy the occasional KFC (with its deliciously salty, soft skin), Jollibee Chicken Joy (flavorful and crispy) and Mini-stop Chicken (cheap and yummy), I must say that I still like our yaya's homemade fried chicken best. No additives and whatnot. Just plain yummy chicken drumsticks simply deep fried to a crisp, best enjoyed with white rice and a huge dollop of tomato ketchup. Oh, childhood favorites!

I put my own twist to country fried chicken! The secret is in the breadcrumbs.

To make this, you'll need:
chicken drumsticks
soy sauce
calamansi (small Philippine lime)
eggs
bread crumbs (I used focaccia bread crumbs from left over bread. The flavors were awesome!)
flour
cayenne pepper
salt and pepper
canola oil


Marinate the chicken in a bit of soy sauce, calamansi juice, and salt and pepper for a few hours or overnight to make it absorb the flavors better.


Beat eggs in a bowl. On a plate, combine flour, breadcrumbs, salt, cayenne and black pepper. 


Dip the chicken in the egg, then coat well in the flour and breadcrumb mixture.


Fry chicken in hot oil until brown and crisp. Let excess oil drain before serving.


The focaccia breadcrumbs I used really added a delicious herb flavor to the chicken! Must experiment with other breadcumbs, dips and marinades soon.
