Lamb Chops + Potato Asparagus Soup + Bailey's Cake

Happy New Year!

2011 was quite a roller coaster ride. The ups and downs made me quite a worrywart, but all in all, it was a good year. For sure, 2012 to be an even better one.

I always enjoy ringing in the New Year because it means that Mike and I will get to celebrate our anniversary soon (uy, mushy!). This year is our 14th year together. Yes, that's not a typo, folks!

Instead of dining out, I decided to prepare a modest meal for us to enjoy at home.

I wanted to prepare lamb, Mike's favorite. Since I was lucky enough to find some at the grocery, I made Lemon Garlic Rosemary Lamb Chops.

For the side salad, I simply blanched some asparagus and french beans fresh from Santi's. I sprinkled it with some ground black pepper, added cubes of feta cheese and drizzled it with a bit of herb olive oil the cheese had been soaking in.

Of course, I didn't forget the wedge of lemon and mint jelly! And since we're trying to eat even more healthier now, I also added red rice on to our plates.

I also whipped up a Potato and Asparagus soup. A rich, hearty soup that was a perfect start to our meal!

For dessert, I made Bailey's chocolate cake with gooey, messy chocolate ganache. Sadly, I didn't get to enjoy this since I was already so full!

I have containers of it in the ref, sitting and marinating in chocolate goodness until I'm ready to attack it. Yum!
