Cauliflower and Chicken Pasta

This dish came to be simply because I needed glass bottles for a project I was doing. Since I always have a hard time making Bechamel (I tend to overpour flour into the mixture and everything ends up clumpy!) I grabbed a bottle of ready-made sauce. I also got a bottle of cheese sauce, but I'll make a post about that next time.

I grabbed a nice head of cauliflower at the grocery and I instantly knew that I wanted to make pasta out of it. I wanted something light, but, yeah, I know that bottled cream sauce isn't really health food! hahaha "Lighter" than beef and rice at least :)

To make this, you'll need:
olive oil
cayenne pepper
cream sauce- The brand I used was called Ragu

Cut the cauliflower into small pieces then blanch in boiling water for about 30 seconds. Drain and set aside. 

Cook pasta until al dente. Drain then set aside.

Sprinkle salt and pepper on to the chicken. Drizzle some olive oil in a hot pan, add chopped garlic then add chicken and stir until cooked through. Take off the heat and slice into strips. Add the chicken back into the pan and add spoonfuls of cream sauce. Add cauliflower and pasta then mix well. Sprinkle more salt and pepper to taste.

You can also add bread crumbs and cheese if you like!
