Vegan Oreo Brownies



I was craving for something sweet, but since I need to keep my blood sugar levels in check I opted to use coco sugar as a sweetener for whatever dessert I could come up with.

Didn't have some eggs in the ref too so I had to google for a recipe for eggless brownies and a couple of Vegan desserts came up. I know that baking is an exact science, but after perusing a couple of recipes, I came up with this one and the result wasn't bad at all!

The final product tastes like a flourless chocolate cake :) Now if only I had some ice cream in the freezer!

To make this, you'll need:
1 1/3 cup all purpose flour
1 1/3 cup coco sugar
1/2 cup Dutch processed cocoa*
1/2 cup cocoa
1/4 teaspoon salt
1/2 cup vegetable oil
4 mashed bananas
2 teaspoons vanilla extract
1/2 cup almond slivers
powdered sugar for dusting

*Dutch processed cocoa is available in baking supply stores like Sweet Craft and Chocolate Lover (see info below). It's what makes Oreo cookies dark brown. If you don't have this, just use natural cocoa.

Mix all the dry ingredients together in a large bowl. Add the oil, bananas, vanilla and almonds. Mix until well combined.

Spray 4.5 x 8 loaf pan with no-stick cooking spray. I used Pam. Spread the batter evenly. You may opt to use a different sized pan and grease it with butter if preferred.

Bake in a preheated 175C oven for 20 to 25 minutes. Let cool in pan before cutting.

Dust with powdered sugar. Or top with ice cream.
